Slow coffee, patient mornings, and far too many mason jars.

Autumn batch: Ethiopia Guji, 18 hours

October 2026

The first cold morning of the season, so naturally I made the most summery drink possible. Guji beans, coarse grind, 1:8 ratio, eighteen hours in the fridge. Bright, a little berry-like, almost tea. Diluted 1:1 with water it tastes like the last warm day of September.

Next time I'll try a shorter steep — around fourteen hours — to see if the florals hold up better.

Why I stopped steeping at room temperature

Room temperature is faster, but in my kitchen it swings too much between day and night. The fridge is boring and predictable, which is exactly what you want from an extraction that runs overnight.
